Got Ganked. Mystery meet ID help?

Today I was eating chicken tacos and our order from Tacos LaFlama had a box of three extra tacos in it. Martin told Brian who's helping in the office that it's tripe! Brian walked in and said, guess what? We got bonus free Tri-tip tacos. I was thinking awesome, Tri-tip... Then on closer inspection, this was entirely something else. I ate one, and now a couple hours later, I'm feeling something in my stomach. What is this? We've come to a conclusion that it's either brain, definitely not tongue, cabesa (head) meat? It didn't stink like liver and they don't have that on their menu... it was soft, so that rules out tongue. It wasn't smelly or anything... so I'm not quite sure. It's a bit on the spongy side. Any clue?

Fish head? geez. Not even close. Gross? This is like a nice Asian breakfast for some of you. Cobra Snake... ugh. I guess this could be "meat" sliced off that dude's belly.

Pretty sure that is a heart. Nothing wrong with heart, kind of chewy.

Could it be carnitas?

No, wait, I think it's that freeze-dried left over meat that they make so none of the cow is wasted.
Just add water - thus the spongy-ness.

It looks like tongue (lengua).Tongue, when boiled for a long time, is actually very soft and melts in your mouth. It's very delicious, and it's as close to kissing a cow as you can get...without kissing a cow.

But it could be cabeza too, which is also tender and melty and looks similar to your photos.

Actually, I think it is pre-chorizo meat.

That one rectangular piece reminds me of a band-aid.
